Level, Heaped, and How to Fix It
Even with one ingredient and one box of it, how you fill the spoon changes the weight. Every recipe figure assumes a level spoon, filled and then struck flat, unless it plainly says "heaped" or "rounded". A heaped teaspoon lets the ingredient mound above the rim and can carry 50 to 100 percent more than a level one, so reading a level instruction as a heaped spoon quietly doubles a small, potent amount.
